Description

These soft Apple Muffins are made with an easy one bowl batter that only takes a few minutes to mix together. The muffins have a swirl of cinnamon sugar throughout the center and are topped with a buttery cinnamon sugar streusel. A drizzle of vanilla icing is the finishing touch on these muffins. Make your own muffin liners to make these look like you got them straight from the bakery


Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup Greek yogurt
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cups apples, peeled and chopped

Cinnamon Sugar Swirl

  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon

Crumb Topping

  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon

Vanilla Icing

  • 1/2 cup powdered sugar
  • 1 tablespoon milk or heavy cream
  • 1/4 teaspoon vanilla extract

Instructions

1. Preheat oven to 375F. Line a 12-count muffin tin with muffin liners, or you can make your own (see note at bottom of recipe).

2. Make the crumb topping. In a medium size bowl, add sugar, butter, flour and cinnamon. Use a fork to claw/mix ingredients together. Place in refrigerator until ready to use.

3. Make cinnamon sugar swirl. In a small bowl, stir together granulated sugar and cinnamon. Set aside until ready to use.

4. Make muffins. In a large bowl, add melted butter, sugar, egg, milk and Greek yogurt. Whisk to combine. Add in the sifted flour, baking powder, baking soda and salt. Mix with a wooden spoon or spatula until just combined. Fold in the chopped apples.

5. Fill prepared muffin liners halfway full. Sprinkle cinnamon sugar over top of batter. Use remaining muffin batter to fill the muffin liners full. Sprinkle crumb topping over top.

6. Bake in preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

7. Allow muffins to cool 5 minutes in muffin tin, then remove and allow to finish cooling on wire cooling rack.

8. Make the vanilla icing. In a small bowl, whisk together ingredients for vanilla icing. Drizzle icing with spoon or whisk over muffins. Enjoy!
