Description

There is nothing that beats a stack of warm, fluffy pancakes. These Berry Pancakes are thick, fluffy and are bursting with fresh blueberries, strawberries and raspberries. Serve these pancakes with a delicious, homemade berry syrup that takes less than 10 minutes to make.


Ingredients

  • 1/4 cup maple syrup
  • 4 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup raspberries
  • 1/2 cup blueberries
  • 1/2 cup strawberries, stem removed and chopped
  • Mixed Berry Syrup
  • 1/3 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon cornstarch
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh strawberries, chopped
  • 1/2 cup fresh raspberries

Instructions

1. In a large bowl, add maple syrup, butter, egg, vanilla extract and milk. Whisk to combine, then add flour, baking powder and salt. Whisk to combine. Fold in the fresh berries just until combined.

2. Heat a nonstick pan or griddle over medium-low heat. Add oil or butter to pan to lightly grease pan. Pour 1/3 cup batter into pan. Use a heat proof spatula or spoon to tuck the edges of the pancake in to help form a round shape.

3. When bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.

4. Make the Berry Syrup. In a large skillet, add all ingredients for the berry syrup. Heat over medium heat, until the berries release some of their juices and the mixture thickens. Remove from heat.

5. Pour warm syrup over warm pancakes and enjoy!
