These Blueberry Crumble Bars combine ripe, juicy blueberries with a delicious buttery, crumble that serves as both the crust and the crumb topping. Every bite is bursting with juicy blueberries complemented by the crunch of the crumble topping. Top these with a vibrant blueberry icing for the perfect finishing touch.
Ingredients
Crust and Crumble Topping
- 3/4 cup unsalted butter, melted
- 1/4 cup brown sugar, packed
- 3/4 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon (optional)
- 1/2 teaspoon salt
Blueberry Filling
- 4 cups blueberries
- 1/3 cup granulated sugar
- 1/2 teaspoon cinnamon (optional)
- Juice of 1/2 lemon
Blueberry Icing
- 1 cup powdered sugar
- 2 tablespoons blueberry jam (warmed)
- 1–2 tablespoons milk
Instructions
1. Preheat oven to 350F. Line an 8×8 baking pan with parchment paper and set aside.
2. In a large bowl, add all ingredients for crust and crumble topping. Mix with a fork until mixture is combine and crumbly. Add ¾ of the mixture to the prepared 8×8 pan. Using your hand, press the mixture evenly into the bottom of the pan.
3. In a large bowl, add berries, lemon juice, sugar and cinnamon. Toss gently to combine. It’s okay if there are clumps of sugar. It will dissolve once baked. Spread the mixture over the crust.
4. Using your hands, crumble the remaining crumb topping over top of the berries.
5. Bake 350F 40-45 minutes, or until crumble topping is golden brown. Allow to fully cool before slicing.
6. Make the Blueberry icing: In a small bowl, whisk together all ingredients for icing. Drizzle over bars and enjoy!
Notes
- If you would like to make these with lemon flavor instead, add lemon zest to the crust/crumble topping in place of the cinnamon. Additionally, leave the cinnamon out of the blueberry filling and add the zest of a lemon.
