Description

These fudgy brownie cookies are a delicious mashup between a cookie and a rich, decadent brownie. These cookies have a beautiful shiny, crackled top, just like a brownie. This handheld treat offers the best of both classic desserts in one bite.


Ingredients

  • 4 ounces semi-sweet chocolate
  • 1/2 cup unsalted butter
  • 3 large eggs
  • 1 1/4 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup mini semisweet chocolate chips

Instructions

1. Preheat oven to 350F. Line a baking sheet with parchment paper.

2. In a heat proof bowl, add the 4 ounces semi-sweet chocolate and butter. Fill a small saucepan 1/3 of the way full with water. Bring the water to a simmer. Place the heatproof bowl on top of the saucepan. Stir the chocolate mixture until melted. Remove from heat and allow to cool for 10 minutes.

3. In a large mixing bowl, whisk the eggs and sugar until light and frothy.  Add in the melted chocolate mixture and vanilla extract and stir to combine. Add in the sifted flour, cocoa powder, baking powder and salt. Mix just until combined. Fold in the semisweet chocolate chips.

4. Cover the bowl and chill cookie dough for 30 minutes.

5. Scoop the cookie dough by 2 tablespoon measurements onto prepared parchment paper lined baking sheet.

6. Bake in preheated oven for 9 minutes.  Allow to cool completely on pan.
