Description

These Cinnamon Roll Butter Swim Biscuits are an indulgent mashup of buttermilk biscuits and cinnamon rolls. These biscuits have an incredibly soft, fluffy interior with a golden brown, crisp crust and a delicious layer of cinnamon sugar through the middle. The butter technique involves the biscuits being cooked directly in the butter, resulting in an irresistible biscuit.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons baking powder
  • 2 cups buttermilk

Cinnamon Roll Layer

  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Icing

  • 1 cup powdered sugar
  • 34 tablespoons heavy cream (or milk)

Instructions

1. Preheat oven to 450F.

2. In a microwave safe bowl, melt butter. Pour butter into 9×9 inch pan.

3. In a large bowl, add flour, salt, sugars and baking powder. Whisk to combine.

4. Add in the buttermilk and stir with a wooden spoon or spatula until combined.

5. In a medium size bowl, stir together ingredients for cinnamon roll layer (brown sugar and cinnamon).

6. Pour half the biscuit batter into the 9×9 inch pan. Some of the butter may go over top of the biscuits. Sprinkle the cinnamon sugar mixture over top. Scoop the remaining batter on top. Spread out the batter as evenly as you can.

7. Place the 9×9 inch pan on a rimmed baking sheet (just in case some of the butter spills over the top). Bake in preheated oven for 15-20 minutes, or until a toothpick inserted into the center biscuit comes out clean and the biscuits are golden brown.

8. Make the icing. In a medium size bowl, whisk together the powdered sugar and heavy cream or milk. Drizzle over top of the warm biscuits. Cut into 9 squares, serve and enjoy!
