Description
This Fruit Salad is loaded with a variety of fresh, ripe, juicy fruits, then drizzled with a fresh, citrusy dressing that adds a refreshing taste and keeps the fruit vibrant. This is the perfect snack to munch on during those warm summer days.
Ingredients
- 4 kiwi’s, peeled, cut into slices, then quartered
- 1 pint blueberries, washed and dried
- 12 ounces blackberries, gently washed and dabbed dry
- 1 1/2 pounds strawberries, washed, hulled and cut in halves
- 1 1/2 cups grapes
- 1 fresh pineapple, cored, chopped into bite size pieces
- Juice of 2 oranges
- Juice of 1 lemon
Instructions
1. Gently wash the blackberries, then dab dry. Remove any blackberries that are soft.
2. Wash the blueberries and strawberries. Cut the stem off the strawberries, then cut in halves.
3. Peel the kiwis, then cut into slices that aren’t too thin. Cut the slices in quarters.
4. Cut the pineapple. To do so, cut the top and bottom off of the pineapple, then cut the pineapple in half. Cut the core out of the pineapple by angling your knife at a 45 degree angle and cutting on either side of the core. Cut the core out of both halves. Cut the halves in half where the core was, so that now you have 4 pieces of pineapple. The skin will still be on. Cut the pineapple, do not cut the whole way through the skin, cutting into bite size pieces. To remove the skin, cut the pineapple at a 45 degree angle between the skin and the pineapple pieces. Discard the skin.
5. Add all of the fruit to your large serving bowl.
6. In a small bowl, add the juice of 2 oranges and 1 lemon. Pour the juice over the fruit. Serve and enjoy!
