Description
This Grilled Flatbread is much easier to make than pizza and perfect for the warm summer months when you don’t want to turn your oven on. The dough only requires one 30 minute rise and the result is a delicious crisp, slightly charred exterior with an incredibly tender and fluffy inside. The toppings are fully customizable. I made this grilled flatbread with homemade pesto topped with peppery arugula, sweet grilled peaches, juicy heirloom tomatoes, creamy burrata cheese and a drizzle of balsamic glaze.
Ingredients
Flatbread Dough
- 2 1/4 teaspoons active dry yeast
- 1 cup warm water (warmed to 110F)
- 2 3/4 cups bread flour (or all-purpose flour)
- 1 teaspoon salt
- 3 tablespoons olive oil
Basil Pesto
- 1/2 cup toasted pine nuts
- Juice of 1 lemon
- 2 small garlic cloves
- 2 cups fresh basil leaves
- Pinch of salt
- 1/4 cup olive oil
- 1/4 cup parmesan cheese, grated
Toppings
- Grilled peaches
- Arugula
- Heirloom tomatoes
- Burrata cheese
- Balsamic Glaze
Instructions
1. In the bowl of a stand mixer, fitted with the dough hook attachment, add yeast, water, bread flour, salt and olive oil. Knead on medium speed for 5 minutes. Transfer dough to a greased bowl and cover with plastic wrap. Allow to rise in a warm place for 30 minutes.
2. Punch dough down, then turn out onto lightly floured surface. Roll flatbread out to desired thickness. You can make one large flatbread or 2-3 smaller flatbreads.
3. Preheat grill to 350F. Lightly grease grill grates.
4. Cut peaches in half and remove the seed. Place, cut side down, on one side of grill. Grill for 4 minutes.
5. Transfer flatbread to grill and grill a few minutes, before using tongs to flip over. Grill other side for a few minutes.
6. Make Basil Pesto. In a food processor, add garlic, toasted pine nuts, lemon juice, basil leaves and pinch of salt. Pulse until well chopped. With the food processor running, drizzle in the olive oil to your desired consistency.
7. Assemble the flatbread. Spread the pesto over top of the flatbread, followed by the arugula, sliced tomatoes, sliced grilled peaches and burrata cheese. Add a drizzle of balsamic glaze and enjoy!
