Description
These Peach Cobbler Bars are made with a rich, buttery crust that serves as both the crust and the crumble topping. The bars are filled with juicy peaches, then drizzled with a delicious vanilla icing. These bars are the perfect easy, summer dessert.
Ingredients
Crust and Cobbler Topping
- 3/4 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 3/4 teaspoons ground cinnamon
- 1/2 teaspoon salt
Peach Filling
- 3 cups peaches, diced
- 1/4 cup brown sugar
- 2 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
Vanilla Icing
- 1 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
1. Preheat oven to 350F. Line an 8×8 baking pan with parchment paper and set aside.
2. In a large bowl, add all ingredients for crust and cobbler topping. Mix with a fork until mixture is combine and crumbly. Add ¾ of the mixture to the prepared 8×8 pan. Using your hand, press the mixture evenly into the bottom of the pan.
3. In a large bowl, add peaches, and sugar. Toss gently to combine. It’s okay if there are clumps of sugar. It will dissolve once baked. Add peaches over top of crust.
4. Using your hands, crumble the remaining cobbler topping over top of the peaches.
5. Bake in preheated oven for 40 minutes, or until crumble topping is golden brown. Allow to fully cool before slicing.
6. In a small bowl, whisk together ingredients for vanilla icing. Drizzle over bars. Serve and enjoy!
