Description
These classic Peanut Butter Blossoms are incredibly soft and chewy. They have the just the right amount of peanut butter that gives them delicious peanut butter flavor, but doesn’t make the dough too dry and crumbly. Before baking the peanut butter cookie dough is rolled in granulated sugar giving the cookies an extra hint of sweetness and texture. The warm baked cookies immediately get a sweet chocolate kiss placed in the center of the cookie. The soft, chewy peanut butter cookies pair perfectly with the sweet chocolate kiss in the center. These cookies are a classic during the holiday season, but honestly I could eat them all year long!
Ingredients
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2/3 cup creamy peanut butter
- 2 teaspoons vanilla extract
- 3/4 teaspoon baking soda
- 1 1/3 cups all-purpose flour
Coating
- 1/4 cup granulated sugar, for rolling
After baking
- 22 Hershey kisses, unwrapped
Instructions
1. Preheat oven to 350F. Line two baking sheets with parchment paper. Set aside.
2. Melt the butter in a microwave safe bowl or in a saucepan on the stovetop. Allow to cool 5 minutes.
3. In a large bowl, whisk together butter, sugars, egg, creamy peanut butter and vanilla extract. Whisk until combined. Add in the flour and baking soda. Whisk just until combined.
4. Scoop cookie dough by 1 ½ tablespoon measurements.
5. Add ¼ cup sugar to a small, shallow bowl. Add cookie dough balls, one at a time and roll in sugar, making sure to coat all sides. Place on prepared baking sheet. Repeat with remaining cookie dough.
6. Bake in preheated oven 9-10 minutes, or until the cookies look puffed and lightly cracked. Remove from oven and immediately place a Hershey kiss in the center of the cookie. Allow to cool completely on baking sheet until the chocolate is set.
