Description

This Taco Potato Skillet is perfect for an easy weeknight meal, or substitute sausage to make it a brunch . Potatoes are tossed in a chili seasoning, then roasted until crisp on the outside and fluffy on the inside. Chili seasoned taco meat is tossed together with peppers and onions then scooped on top of the crispy, roasted potatoes. A homemade nacho cheese sauce is the finishing touch to this delicious meal.


Ingredients

Potatoes

  • 2 pounds russet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon parsley
  • 1/2 teaspoon oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Taco Meat

  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon parsley
  • 1/2 teaspoon oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound ground beef
  • 3 bell peppers (variety of colors – red, orange, yellow), chopped
  • 1 sweet onion, chopped

Nacho Cheese

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups whole milk
  • 1 1/2 cups sharp cheddar cheese
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika

Instructions

1. Preheat oven to 425F. Drizzle a ¼ sheet pan with olive oil.

2. Make the potatoes. In a large bowl, add peeled, chopped potatoes, olive oil and spices. Season with salt and pepper. Toss to combine. Add potatoes to prepared sheet pan. Roast in oven for 40 minutes, stirring halfway through.

3. Make the taco meat. In a large skillet, add ground beef and spices. Cook,  breaking apart meat as it cooks over medium heat, until meat is no longer pink. Remove meat from the pan and drain any extra grease.

4. Sauté the peppers and onion. Add the peppers and onion to the same skillet over medium heat. Cook 5 minutes, stirring frequently, until softened. Add ground beef back in and stir to combine. Remove from heat.

5. Make the nacho cheese. In a small saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Slowly whisk in milk until combined. Cook, stirring constantly until thickened. Remove from heat. Add in the cheese, chili powder and paprika. You can leave out the chili powder and paprika if you do not want it to be spicy. Stir until cheese is melted and cheese sauce is smooth.

6. Serve. Add potatoes, then top with ground meat mixture. Drizzle with cheese sauce and enjoy!
