Sourdough Crackers
These buttery Sourdough crackers only require 4 ingredients to make and only a few minutes of hands on time. These crackers are thin, crispy and so delicious fresh out of the oven. The added flavor from the sourdough discard takes these up a notch. Add Italian seasoning, rosemary and sea salt, or Herbes de Provence to season your crackers, or leave plain with a sprinkle of sea salt.

The dough of the cracker is made with pantry staple ingredients. To make this whole batch of crackers, it probably costs around $1. You can’t beat that price at the grocery store and the flavor is just unmatched.

The flavor of these homemade crackers is fully customizable. I chose to add rosemary and sea salt, but you could add freshly cracked pepper, green onions, Italian seasonings, or your own favorite seasoning blend. Get creative!
The ingredients
- sourdough discard – sourdough discard is a mixture of flour and water. It’s the main component of the crackers and gives the crackers their sturdy and crisp texture. The sourdough discard also adds a delicious tangy flavor to the crackers.
- salt – this contributes to the savory flavor of the crackers.
- Italian Seasoning – the Italian seasoning gives these crackers such delicious flavors. If you prefer a different blend of seasoning, you can certainly add it in place of the Italian seasoning (rosemary and sea salt are a great combo)
Here’s how to make these sourdough crackers
preheat the oven
Preheat your oven to 350F. Line a baking sheet with parchment paper. Set aside.
mix the dough
Add the sourdough discard, butter, salt, and Italian seasoning. Mix with a whisk, wooden spoon or spatula to combine.
get the crackers ready to bake
Pour the cracker mixture onto your prepared parchment paper lined baking sheet. Spread with an offset spatula into a 12×11 inch rectangle. You want the batter to be thin so that the crackers get a nice crispy texture.
bake 10 minutes, then score
Bake the crackers 10 minutes in the oven, then remove from the oven and score with a pizza cutter. Cut the crackers into your desired length and width. It doesn’t have to be perfect. I had a variety of sizes in my batch.
bake roughly 10 more minutes
Bake the crackers 10 more minutes, then check on them. They may need another minute or two. Bake until the crackers are a light golden brown color.
Storage
Store these sourdough crackers in an airtight container for up to 1 week. Make sure you allow the crackers to completely cool before placing in your airtight container.

- Can I add different flavors to the sourdough crackers? Absolutely! Feel free to substitute the Italian seasoning for another seasoning, such as rosemary and sea salt, or Herbes de Provence. You can also add parmesan cheese or cheddar cheese to the crackers if desired.
- Can I freeze these sourdough crackers? Yes! After cooling the crackers to room temperature, place in an airtight container. They can be stored for up to 3 months. When you are ready to eat these, thaw in the refrigerator the night before. You can re-crisp the crackers by placing on a parchment paper lined baking sheet and baking in a 350F oven for a few minutes.

Ingredients
- 3/4 cup sourdough starter
- 3 tablespoons unsalted butter, melted
- 1/8 teaspoon salt
- 1 1/2 teaspoons Italian seasoning
Instructions
1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. Melt the butter in a microwave safe dish, then allow to cool a few minutes.
3. Add the sourdough starter, butter, salt and Italian seasoning to a large bowl. Mix to combine.
4. Pour cracker mixture onto prepared parchment paper. Spread with an offset spatula into a 12×11 inch rectangle.
5. Bake in preheated oven 10 minutes, then remove from oven. Use a pizza cutter to score crackers into desired cracker shape and size.
6. Place back in oven for additional 10-14 minutes. Bake until the crackers are lightly golden brown.
7. Allow crackers to cool to room temperature before storing in an airtight container. You may store in an airtight container for 1 week.
Notes
- Can I add different flavors to the crackers? Feel free to customize the cracker flavor to your own preference. You may add cheese, such as parmesan or cheddar, or different herbs (rosemary and sea salt, Herbes de Provence). Garlic powder and onion powder also add delicious flavor to these crackers.
- Storage: Store leftover crackers in an airtight container for 1 week. Make sure you Allow the crackers to cool to room temperature before storing.
- Freezing: You can freeze these crackers. After cooling to room temperature, store crackers in an airtight container in freezer for up to 3 months. When you are ready to eat the crackers, thaw in the refrigerator overnight, then re-crisp in a 350F oven for a few minutes.
