Chocolate Chip Cookie Bars

These soft, gooey chocolate chip cookie bars, are made with brown butter and lots of chocolate chips for the most delicious treat. The brown butter adds an extra depth of flavor that pairs nicely with the chocolate, brown sugar and vanilla notes. These cookie bars are simple to make and only require a few minutes to mix the ingredients together. No dough chilling required!

I made these chocolate chip cookie bars for a picnic we had in our backyard. It was a warm summer night and lightning bugs were slowly making their way out for the night. The sun was starting to set as I set up the picnic blanket. I made my turkey grinder subs, which were the perfect meal on the hot summery day. And these chocolate chip cookie bars really hit the spot for dessert.

Chocolate chip cookies are widely considered the most popular cookie, and I must say they are my personal favorite as well! I mean how can you resist melty chocolate chips, speckled throughout a warm, gooey cookie?

Baking chocolate chip cookies is fairly easy, but chocolate chip cookie bars are even easier. There are days I feel like I don’t have a second to spare, and chocolate chip cookie bars are my go to dessert on those days. They only take a few minutes to mix together. They don’t need a fancy mixer, and require no dough chilling. The cookie dough bakes in a 9×9 inch baking pan, so you don’t even have to worry about individually scooping, and rolling out the cookie dough balls. It really can’t get any easier!

When I made these chocolate chip cookie bars, I wanted to make them, loaded with chocolate chips, of course. But, I also wanted these cookie bars to have a rich depth of flavor. Enter brown butter. The brown butter truly takes these over the top. The nutty notes from the brown butter really enhance the brown sugar, vanilla and chocolatey notes.

Ingredients

  • 1 cup unsalted butter
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup mini chocolate chips

Instructions

1. Preheat oven to 350F. Line a 9×9 inch baking pan with parchment paper.

2. In a small saucepan, add butter. Cook over medium heat, stirring constantly, until the butter turns a light, golden brown. Remove from heat. Pour the browned butter into a bowl, so that the butter stops browning and doesn’t get too dark. Allow to cool while you measure out the remaining ingredients for your cookies.

3. In a large bowl, add sugars, cooled brown butter, eggs and vanilla extract. Stir to combine, then add sifted flour, baking soda, cornstarch and salt. Mix just until combined. Fold in the chocolate chips.

4. Scoop cookie dough into prepared 9×9 inch pan. Flatten into a fairly even layer. You can add a few extra chocolate chips on top if you would like (mostly just for appearance).

5. Bake in preheated oven 30-32 minutes, or until edges are light golden brown.
