S’mores Brownies
These S’mores Brownies are made with a layer of buttery graham crackers, fudgy brownies and toasted mini marshmallows. The brownies are made with two different types of chocolate and cocoa powder for a rich, fudgy taste. The brownies can be made in one bowl and only take a few minutes to mix together. These S’mores Brownies are the perfect summery treat!

S’mores are such a classic summer dessert. There’s truly nothing that beats melty chocolate, and a toasted marshmallow sandwiched together between two buttery graham crackers. Andddd, now I’m craving one!
These s’mores brownies are everything you love about a s’more with that extra delicious layer of fudgy brownie. These may just be my favorite summer treat right now. The brownies can be made in one bowl and only take a few minutes to mix together. They are made with two different types of chocolate and cocoa powder to give a delicious rich, chocolate fudge flavor. Then, add in that layer of buttery graham crackers and toasted marshmallow and ohhh my word! I’m telling you, you will love these!

- Ice Cream Sandwich – This no bake treat features a buttery graham cracker crust and no churn ice cream. I made my ice cream sandwiches with blueberry and strawberry, but you could certainly use peach if you wanted to.

Store leftovers covered in an airtight container up to 3 days, or in the refrigerator for up to 1 week.

Description
These S’mores Brownies are made with a layer of buttery graham crackers, fudgy brownies and toasted mini marshmallows. The brownies are made with two different types of chocolate and cocoa powder for a rich, fudgy taste. The brownies can be made in one bowl and only take a few minutes to mix together.
Ingredients
Brownies
- 1/2 cup unsalted butter, cut into small pieces
- 4 ounce semi-sweet chocolate bar, coarsely chopped and divided
- 1/2 cup cocoa powder (55 grams)
- 1 1/2 cups granulated sugar (310 grams)
- 2 large eggs
- 2/3 cup all-purpose flour (85 grams)
- 1/2 teaspoon salt (3 grams)
- 3/4 cup semi-sweet chocolate chips
Graham Cracker Layer
- 4 graham cracker sheets
Marshmallow Layer
- mini marshmallows
Instructions
1. Preheat oven to 350F. Line an 8×8 pan with parchment paper.
2. In a bowl add the butter semi-sweet chocolate. Microwave in 30 second increments, stirring in between, until butter and chocolate are melted. Alternatively, you can bring a small pot of water to a boil, then turn off the heat. Set a bowl with the butter and chocolate on top of the pot and stir until the mixture is melted.
3. Add the melted butter and chocolate to a large mixing bowl. Add sugar and cocoa powder and whisk to combine. Add in the eggs and whisk to combine. Add the flour, salt, and chocolate chips. Use a rubber spatula or wooden spoon to fold the ingredients together until combined. The batter will be thick.
4. Place graham crackers in bottom of parchment paper lined baking pan. Scoop batter over graham crackers, then spread evenly. Sprinkle mini marshmallows over top of brownie batter.
5. Bake in preheated oven for 30-34 minutes, or until a toothpick inserted into the center has only a few moist crumbs on it. If you want a more fudgey brownie, bake for 30 minutes. The brownies will set up as they fully cool.
6. Allow brownies to completely cool before slicing. The brownies will set and firm up as they cool. You can pop them in the fridge to help them firm up and set.
