Chocolate Chip Rolls

These pillowy soft chocolate chip rolls are made with a rich brioche dough and plenty of chocolate chips. The rolls require one 60 minute rise and a quick second rise while the oven preheats. Each bite is filled with fluffy bread stuffed with melted chocolate chips. Serve these warm for the most delicious soft and tender rolls.

Here’s how to make these Chocolate Chip Rolls

I recommend using a stand mixer fitted with the dough hook attachment to make these, but if you do not own a stand mixer, you can certainly make the dough by hand. It will just take a bit longer.

In a large bowl, you’ll add the yeast, warm milk and sugar. Since you are using instant yeast for these chocolate chip rolls, you do not need to allow the yeast to sit/activate. Of course, if active yeast is all you have on hand, feel free to use it. Just allow the mixture to sit for 5 minutes to activate the yeast.

Next, you’ll add the flour, egg, salt and butter. Knead the dough for 5 minutes on medium-low speed. If you are making these rolls by hand, I recommend kneading the mixture for 10 minutes. Transfer the dough to a greased bowl and cover with plastic wrap. You will add the mini chocolate chips AFTER the dough rises.

Allow the chocolate chip rolls to rise for 60 minutes in a warm place. Sometimes I recommend allowing the dough to rise in a warm oven to allow for the dough to rise a bit faster. However, you don’t want the dough to be too warm with this recipe, because it will melt the chocolate chips.

After the dough is done rising, punch down and place on a lightly floured surface. Now is when you will add in the chocolate chips.

Sprinkle the chocolate chips over the dough, then knead the chocolate chips into the dough.

Divide the dough into 16 roughly equal pieces. They don’t have to be exact. Roll each piece into a smooth ball, then place in a greased 9×13 inch pan. Cover the pan with plastic wrap.

The chocolate chip rolls need just one more rise before you bake them in the oven. The second rise is a quick 20 minutes. You can preheat your oven during this time.

Now, the chocolate chip rolls are ready to bake! Brush the dough balls with a beaten egg. This will give the top of the dough a beautiful golden brown color and shine once baked. My rolls took right around 17 minutes to bake, but ovens can vary. I recommend checking the rolls around 15 minutes. The rolls are done when the tops are a nice golden brown color.

Ingredients

Dough:

  • 1 cup milk (warmed to 110F)
  • 1 packet (2 1/4 teaspoons) instant dry yeast
  • 3 tablespoons granulated sugar
  • 33 1/2 cups bread flour (or all-purpose)
  • 1 teaspoon salt
  • 1 large egg
  • 6 tablespoons unsalted butter, softened
  • 3/4 cup mini chocolate chips

Egg Wash

  • 1 egg, beaten

Instructions

1. In the bowl of a stand mixer fitted with the paddle attachment, add the warm milk, yeast, sugar, 3 cups bread flour (or all-purpose), salt and softened butter. Knead on medium-low speed for 5 minutes. Add more flour, 2-3 tablespoons at a time if needed. The dough will be soft, but shouldn’t be sticky.

2. Transfer dough to lightly greased bowl. Spray top of dough with nonstick spray and cover with plastic wrap. Allow the dough to rise for 60 minutes in a warm place (Sometimes I recommend allowing the dough to rise in a warm oven. However I do not recommend allowing your dough to rise in a warm oven this time, because you don’t want the dough to be too warm. It will melt the chocolate chips).

3. Once the dough is done rising, punch the dough down and turn out onto very lightly floured countertop. Add the chocolate chips on top of the dough. Fold the dough over several times, and knead the chocolate chips into the dough.

4. Once the chocolate chips are added into the dough, divide into 16 roughly equal pieces.

5. Shape each piece into a smooth ball, then place in a greased 9×13 inch baking pan. Cover with plastic wrap and allow to rise for 20 minutes, while the oven preheats.

6. Preheat your oven to 350F.

7. Brush the rolls with a beaten egg (this helps the rolls achieve a beautiful shiny golden brown color on top), then bake in the oven for 15-20 minutes, or until the rolls are golden brown in color.

8. Allow to fully cool in pan. Serve and enjoy!
