How do I make my own muffin liners?
Cut 12 pieces of parchment paper that measure 5×5 inches. Place a piece of parchment paper on the bottom of a glass, then use your hands to press the parchment paper along the sides of the glass. This will create the shape of the liner. Place the liners in the muffin tin. It’s okay if they don’t fit perfectly. The batter will hold the liner in the muffin tin, once added.
Can I use gluten free flour?
Yes, you can use a gluten free all-purpose blend flour in this recipe in a one to one ratio. I recommend using Bob’s Red Mill or King Arthur’s gluten free all-purpose blend.

Ingredients
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 cups mashed bananas (approximately 3 large bananas, mashed
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/4 cups blueberries (fresh or frozen)
Cinnamon Sugar Topping
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
Instructions
1. Preheat oven to 375F. Line a 12-count muffin tin with cupcake liners.
2. In a large bowl add bananas, and mash with a fork. Add melted butter, sugars, egg, yogurt and vanilla extract. Whisk to combine. Add in sifted flour, baking soda, salt and cinnamon. Mix just until combined, then fold in blueberries.
3. In a small bowl, stir together brown sugar and cinnamon until combined.
4. Scoop muffin batter into prepared muffin tins. Sprinkle cinnamon sugar mixture on top.
4. Bake in preheated oven for 20-23 minutes, or until a toothpick inserted into the center comes out clean.
5. Serve and enjoy!
Notes
- To make your own muffin liners: cut out 12 squares of parchment paper, measuring 5 inches x 5 inches. Place a cup upside down on the counter. Place one square of parchment paper on top of the cup and use your hands to push the sides of the parchment paper down. This will help shape the parchment paper to fit into the muffin tin. Place the liner in the muffin tin. It may not stay down completely, but once you add the muffin batter, it will stay down in the muffin tin.
