Ingredients
- 2 pounds fresh strawberries, hauled, rinsed and cut into quarters
- Juice of 1 lemon
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
Cobbler Topping
- 1 3/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 8 tablespoons unsalted butter, cubed
- 1/2 cup buttermilk, cold
Egg Wash
- 1 egg, beaten
Topping
- Granulated sugar
Instructions
1. Preheat oven to 375F.
2. Using a 10-inch cast-iron skillet, 10-inch round cake pan, or 9×9 inch square pan, add strawberries, lemon juice, sugar and flour. Toss to combine. Set mixture aside.
3. In a large mixing bowl, make cobbler topping. Sift flour, sugar and baking powder into bowl (or you can add the flour, sugar and baking powder and use a whisk to combine. This also acts to sift the ingredients, breaking apart the bigger clumps of flour). Using a pastry knife, cut in the butter until pea sized morsels remain. Add in the cold buttermilk and use hands or wooden spoon to combine the dough, just until the dough comes together.
4. Scoop the cobbler topping on top of the strawberries using a 3-tablespoon cookie scoop.
5. Brush the cobbler topping with a beaten egg. This helps the cobbler topping achieve a nice shiny, golden-brown color. Sprinkle with granulated sugar and bake in preheated oven for 30-40 minutes, or until the cobbler topping is golden brown and strawberry mixture is bubbling.
6. Serve with a scoop of ice cream and enjoy!
