Upside Down Apple Cake…this cake has a buttery layer of homemade caramel with apples arranged on top. A brown sugar spiced cake batter is poured over top then baked until golden brown. After baking the cake is flipped over to reveal a beautiful caramel apple layer.
Ingredients
Caramel Apple Layer
- 2–3 medium apples, thinly sliced (I prefer using Pink Lady – see note at bottom for other apples you can use)
- 1 cup granulated sugar
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1/2 teaspoon vanilla extract
Cake
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup Greek yogurt, or sour cream
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon ginger
- 1/2 teaspoon salt
Instructions
1. Preheat oven to 350F. Cut a 9-inch circle of parchment paper and place it in the bottom of a 9-inch cake pan. Spray the sides and piece of parchment paper with nonstick cooking spray. Set aside.
2. Make the caramel. In a medium sized saucepan, or skillet, add sugar. Cook over medium heat, stirring constantly with a wooden spoon or heat proof spatula, until sugar is melted.
Reduce heat to low and stir in the butter. Be careful, as the caramel will bubble rapidly when the butter is added. Cook, stirring constantly until the butter is melted and combined.
Slowly and carefully, pour in the heavy cream. Stir the mixture to combine.
Increase heat to medium and allow the mixture to bubble for one minute.
Remove the caramel from the heat and pour into your prepared pan.
3. Arrange the apples over the caramel. Start at the center, and place slices in a circular motion. You will have one smaller circle in the center, then one larger circle around the outside. The apple slices should overlap slightly
4. Make the cake batter. In a large bowl, add melted butter, sugars, Greek yogurt, eggs, milk and vanilla extract. Whisk to combine. Add in the sifted flour, baking powder, spices and salt. Mix just until combined.
5. Assemble and bake. Pour the batter over the caramel apple mixture. Bake in preheated oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
6. Short cool time. Allow the cake to cool on a wire cooling rack for 10 minutes.
7. Flip the cake. Run a butter knife along the edges of the cake to ensure the cake doesn’t stick to the sides. Place a plate on top of the cake pan. Flip the pan over. Lift the cake pan up and off the cake, then pull the piece of parchment paper off of the cake.
8. Serve as is, or with a scoop of ice cream and enjoy!
Notes
- What apples are best for this cake? I prefer using Pink Lady apples for this cake. These apples have a firm structure, which holds up very well when baking. These apples also have a low moisture content, which helps keep the caramel thick and prevents the cake from getting soggy. Pink Lady apples have a distinct sweet-tart flavor profile, the tart flavor helps to balance the sweet caramel, while the natural sugar from the apple enhances the caramel flavors. You can also use Honey Crisp, Fuji, or Braeburn apples.
