Description
This soft, tender Apple Coffee Cake is the perfect fall bake. Soft, fluffy cake is layered with a sweet cream cheese and homemade apple pie filling. The cake is then topped with a buttery cinnamon sugar crumble topping before baking. After baking, the cake is drizzled with a maple icing. This cake makes your kitchen smell like a cozy apple pie as it bakes. The hardest part of making this cake is waiting for it to finish baking!
Ingredients
Apple Filling
- 2 1/2 cups apples, chopped (roughly 2 large apples – I used Pink Lady)
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1 tablespoon cornstarch + 2 tablespoons cold water
- Juice of 1 lemon
Cream Cheese Layer
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 large egg
Cake
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup Greek yogurt
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Crumble Topping
- 3/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 5 tablespoons unsalted butter, softened
- 1 1/2 teaspoons ground cinnamon
Maple Icing
- 3/4 cup powdered sugar
- 2 tablespoons maple syrup
Instructions
1. Preheat oven to 350F. Line the bottom of a 9-inch round cake pan with parchment paper. Spray the bottom and sides with nonstick spray. Set aside.
2. Make the apple filling. In a medium sized skillet, add apples, sugar, cinnamon and juice of lemon. Cook, stirring frequently over medium heat, until mixture begins to bubble and sugar is dissolved.
In a small bowl, whisk together cornstarch and cold water until cornstarch is dissolved.
Pour cornstarch mixture into apple mixture. Continue to cook over medium heat, stirring constantly until mixture is thickened. Remove from heat.
Pour mixture onto heatproof plate and place in refrigerator until ready to use.
3. Make the crumble topping. In a medium sized bowl, add flour, sugar softened butter and cinnamon. Use a fork to claw/combine ingredients together until small pea sized morsels remain.
Place in refrigerator until ready to use.
4. Make the cream cheese mixture. In the bowl of a stand mixer fitted with the paddle attachment, or a large mixing bowl, using a handheld mixer, beat cream cheese, powdered sugar, egg and vanilla extract, until smooth and creamy. Set aside until ready to use.
5. Make the cake. In a large bowl, add sugar, butter, eggs, vanilla extract and Greek yogurt. Whisk to combine.
Add in sifted flour, baking powder, baking soda and salt. Mix just until combined.
6. Assemble and bake.
Add half the cake batter to prepared pan.
Add cream cheese mixture in dollops, then use spoon to spread the layer evenly.
Add half of apple mixture.
Add remaining cake batter.
Add remaining apple mixture.
Add crumble topping.
Bake in preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean. If you find your cake is getting too dark on the top, place a piece of aluminum foil loosely on top.
7. Allow the cake to fully cool in pan on wire cooling rack.
8. When ready to serve, make the maple icing. In a medium sized bowl whisk together powdered sugar and maple syrup. If the icing is too thick, you may add a splash of milk, or a touch extra maple syrup. If the icing is too thin, add a touch extra powdered sugar.
Drizzle over cake. Serve and enjoy!
