These Apple Fritter Muffins are an easy baked handheld version of the classic fried apple fritters. Moist, tender muffins are made with the just the right amount of cinnamon sugar and plenty of crisp, sweet apples tossed directly into the muffin batter. The muffins are topped with a sweet vanilla glaze after baking. These muffins have all the cozy fall flavors you love about apple fritters.


Ingredients

Units Scale
  • 1/2 cup oil
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/3 cup applesauce
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 large apple, peeled and chopped

Vanilla Icing

  • 1 cup powdered sugar
  • 1 1/22 tablespoons milk or heavy cream
  • 1/4 teaspoon vanilla extract

Instructions

1. Preheat oven to 375F. Line a 12-count muffin tin with muffin liners, or you can make your own (see note at bottom of recipe).

2. Make muffins. In a large bowl, add oil, sugar, egg, and applesauce. Whisk to combine. Add in the sifted flour, baking powder, cinnamon, baking soda and salt. Mix with a wooden spoon or spatula until just combined. Fold in the chopped apples.

3. Fill prepared muffin liners.

4. Bake in preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

5. Allow muffins to cool 5 minutes in muffin tin, then remove and allow to finish cooling on wire cooling rack.

6. Make the vanilla icing. In a small bowl, whisk together ingredients for vanilla icing. Drizzle icing with spoon over muffins. Spread to coat the top of the muffin with the glaze. Enjoy!
