Brookies Cookies
These Brookies Cookies combine two classics, a brownie and a chocolate chip cookie into one delicious bite. The chocolate chip cookie dough is made with brown butter, which adds a rich depth of flavor. The brownie cookie dough is extra fudgy and soft, adding a delicious contrast in textures between the crisp edges of the chocolate chip cookie.

I made Brookies a few months ago, during the warm summer months in bar form. But, recently I was craving a handheld cookie. And there’s just something about a good cookie. While I love eating bar dessert recipes, I can never turn down a good cookie.
So, I set off to make Brookies, but in cookie form, and these Brookies Cookies may just be my favorite cookie ever. The chocolate chip cookie gets layered on the bottom and top, with the fudgy brownie layer in the center. So, you get the crisp, chewy edges of the chocolate chip cookie with the soft, fudgy center of the brownie. Okay, now I am getting hungry and may just run to the kitchen to go make another batch!

The brownie cookie dough is extra fudgy and soft, adding a delicious contrast in textures between the crisp edges of the chocolate chip cookie.
Ingredients
Brownie Batter
- 1/2 cup unsalted butter, melted
- 1/2 cup cocoa powder
- 1 1/4 cups granulated sugar
- 2 large eggs
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup semi-sweet chocolate chips
Cookie Dough
- 10 tablespoons unsalted butter, browned
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 cup semi-sweet chocolate chips
Instructions
1. Preheat oven to 350F. Line a baking sheet with parchment paper. Set aside.
2. Brown the butter for the cookie dough. In a small saucepan, add the butter. Cook over medium-low heat on the stovetop, stirring frequently, until the butter is a golden brown color. Remove and set aside. Pour into a separate measuring cup or bowl and allow to cool while you make the brownie batter.
3. Make the brownie batter. Add the melted butter and cocoa powder and whisk to combine. Add in the sugar and eggs and stir to combine. Add in the sifted flour and salt and stir, just until combined. Fold in the chocolate chips. Place in refrigerator while you make the chocolate chip cookie dough.
4. Make the chocolate chip cookie dough. In a large bowl, add the cooled brown butter, sugars, egg and vanilla extract. Whisk to combine. Add in the sifted flour and baking soda and stir just until combined. Fold in the chocolate chips.
5. To assemble, scoop a ½ tablespoon chocolate chip cookie dough. Flatten the cookie dough. Add a 1 tablespoon scoop of the brownie batter on top, then place a ½ tablespoon chocolate chip cookie dough on top of the brownie batter. Press down to slightly flatten the cookie together. Place on prepared baking sheet. Repeat with remaining cookie dough.
6. Bake in preheated oven 10 minutes. Place a few chocolate chips on top of the cookie, lightly pressing into the cookie as soon as it comes out of the oven.
7. Allow to cool 5 minutes on baking sheet, then transfer to a wire cooling rack to finish coolling. Serve and enjoy!
