Marry Me Chicken Tortellini Soup
This Marry Me Chicken Tortellini Soup is a delicious cozy soup that can be made in under 30 minutes. This rich, creamy soup broth is made of fresh garlic, chicken broth, a splash of heavy cream, and a hint of tomato paste for added depth of flavor. The soup is loaded with seasoned chicken, sun-dried tomatoes, a homemade Italian seasoning blend and plenty of freshly grated parmesan cheese. This soup tastes great the next day, too.

One of my favorite cozy soups this time of year is this Marry Me Chicken Tortellini Soup. I just love the cozy flavors in this soup from the rich, savory, creamy broth to the depth of flavor from the tomato paste and herbs. It’s just one of those soups I could eat just about every night of the week. Plus it is sooo easy to make!
It’s still gets warm during the days where I live, but it’s that time of year where the weather cools off considerably in the evenings. Cozy soup season is truly here and I am not complaining about it! I love eating soup any time of year, but there’s just something that makes it more tasty during the colder months. Perhaps it’s just that chill in the air and the fact that the soup truly warms you up as you eat it.

Sunday Supper Chats
Rarely do I keep up with events because I feel like I am so busy in my own personal family stuff that I often, not intentionally miss what is going on. In other words, I think I need to be like two or three people so that I can keep up with everything, haha!
With that being said, I am ashamed to say I did not know who Charlie Kirk was until the recent events. My condolences go out to his family. I cannot imagine what they are going through. I will say that Charlie has helped me gain my own confidence to show my own faith. The other day, I prayed for God to help one of my videos on here to be enjoyed by a lot of you. And you know that is so silly, and in some ways, maybe it is being selfish. But, last week, my pecan pie focaccia did just that. A lot of you have made the recipe and are truly enjoying it. When I talk to God, and keep him in my faith and prayers, I feel a sense of peace and connection. God cares about my worries, as silly as they may seem.
And now back to my own baking and past week, I actually did not bake much this past week. It was a rainy week, and as you can tell in my videos I prefer to film my videos when there is bright sunlight. It just adds a little extra warmth to the videos. I did make some English Muffins, both yeast and sourdough versions, which I plan to share this week. They were sooo yummy and I can’t wait to share them with you. I also made those cinnamon rolls I shared yesterday and a pumpkin muffin, which I will probably share this week as well.

This Marry Me Chicken Tortellini Soup is a delicious cozy soup that can be made in under 30 minutes. This rich, creamy soup broth is made of fresh garlic, chicken broth, a splash of heavy cream, and a hint of tomato paste for added depth of flavor. The soup is loaded with seasoned chicken, sun-dried tomatoes, a homemade Italian seasoning blend and plenty of freshly grated parmesan cheese. This soup tastes great the next day, too.
Ingredients
Chicken
- 2 tablespoons olive oil
- 1 1/2 pounds chicken thighs, or chicken breasts, cut into cubes
- 2 teaspoons garlic powder
- 2 teaspoons dried parsley
- 1 teaspooon dried thyme
- 1/2 teaspoon dried basil
- 1 teaspoon onion powder
- Salt and pepper to taste
Soup
- 1 tablespoon olive oil
- 1/2 medium yellow onion, chopped
- 3 celery hearts, chopped
- 2 tablespoons tomato paste
- 5 cloves garlic, minced
- 3/4 cup sun-dried tomatoes, chopped
- 2 teaspoons dried parsley
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 6 cups chicken broth
- 1 pound cheese tortellini
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 2 cups baby spinach
Instructions
1. Make the chicken. Add chopped chicken to large bowl. Add garlic powder, parsley, thyme, basil, onion powder and season with salt and pepper.
In a large pot, heat 2 tablespoons olive oil over medium heat. Once hot, add chicken and cook until chicken is cooked through and reaches an internal temperature of 165F. Remove chicken and set aside.
2. To the large pot, add 1 tablespoon olive oil and heat over medium heat. Add onion, celery and garlic. Sauté 4 minutes, stirring occasionally. Add in the tomato paste and sun-dried tomatoes. Stir to combine and cook for 1 minute.
3. Add in the chicken broth and bring to a boil. Add in the parsley, thyme and basil and cheese tortellini. Cook the tortellini according to package directions until al dente.
4. Turn the heat off. Add in the cooked chicken, heavy cream, spinach and freshly grated parmesan cheese to the pot. Stir to combine.
7. Ladle into soup bowls. Serve with freshly grated parmesan cheese and enjoy!
