Description
These Meatball Subs feature tender, savory meatballs slow simmered in a homemade marinara sauce. The meatballs are made with plenty of fresh parsley, garlic and freshly grated parmesan cheese. I used sourdough breadcrumbs in these meatballs, which adds flavor and helps maintain moisture in the meatballs. The subs are made with a garlic butter toasted sub roll, plenty of marinara sauce, tender meatballs, melty provolone cheese and fresh basil.
Ingredients
Sauce
- 3 tablespoons tomato paste
- 4 garlic cloves, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (28 ounce) can tomato sauce
- Parmesan rind
- 1/4 cup fresh basil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
Meatballs
- 1 pound ground beef
- 1 large egg
- 1/2 cup plain breadcrumbs
- 1/4 cup fresh parsley, chopped (or 2 tablespoons dried)
- 2 tablespoons fresh basil, chopped (or 1 tablespoon dried)
- 1 teaspoon dried oregano
- 3 garlic cloves, minced
- 1/2 cup parmesan cheese, grated
- Salt and pepper to taste
Homemade Sub Rolls
- 2 1/4 teaspoons instant yeast
- 1 tablespoon honey
- 1 cup warm water
- 2 3/4 cups bread flour
- 3 tablespoons olive oil
- 1 teaspoon salt
Garlic Butter Spread (for rolls)
- 8 tablespoons unsalted butter, softened
- 3 garlic cloves, minced
- 1 teaspoon onion powder
- 1/4 cup fresh parsley, chopped
Instructions
1. Make the meatballs. In a large bowl, add all ingredients for meatballs. Use hands to mix ingredients together until well combined. Scoop meatballs, using a 3 tablespoon measuring scoop. Place on a very lightly greased 9×13 inch baking pan.
2. Broil the meatballs for 8 minutes, then carefully remove, flip the meatballs and broil an additional 4 minutes.
3. Meanwhile, make the sauce. In a large pot, over medium heat, add garlic and tomato paste. Cook for 1 minute, stirring constantly. Add in crushed tomatoes, tomato sauce, oregano, parsley, basil and salt and pepper to taste.
4. Once meatballs are done broiling, add the meatballs to the sauce. Add fresh basil and parmesan rind. Cover and reduce heat to a simmer. Cook for 30-60 minutes. The longer cooking time will increase the flavor.
5. Serve meatballs on a homemade or store-bought roll. Top with parmesan cheese and fresh basil.
Sub Rolls
1. In the bowl of a stand mixer fitted with the dough hook attachment, add all ingredients for dough. Knead on medium-low speed for 5 minutes. Transfer dough to a greased bowl and spray top of dough with nonstick cooking spray. Cover with plastic wrap and allow to rise in a warm place for 1 hour. Alternatively, if you are short on time, turn your oven on. Once it reaches 100F, turn the oven off. Place covered dough in warm oven and allow to rise for 40 minutes.
2. Punch dough down and divide into 4 roughly equal pieces of dough.
Working with one piece at a time, flatten dough with palm of hand, then grab both ends of dough and gently stretch dough until it is 8-inches in length. Starting at the long end, roll into a cylinder, pressing edges together after each roll to seal the dough together. Place in a greased 9×13 inch pan. Repeat with remaining 3 pieces of dough. It is okay if the dough is not completely even (thinner in some areas and fatter in some areas).
3. Cover pan with plastic wrap and allow to rise for 30 minutes.
4. Preheat oven to 375F.
5. Using a sharp knife or bread lame, make a slit down the center of each roll. Brush dough with a beaten egg (this helps create a nice shiny, brown crust). Bake in preheated oven for 15-22 minutes.
6. Remove and allow to cool for 1 hour before slicing the rolls open. If you would like to spread garlic butter on rolls, slice the rolls open and spread 2 tablespoons garlic butter on rolls. Place roll on baking sheet and broil until the top is lightly toasted. Keep an eye on it, as it can brown quickly!
