Nutella Donuts

These homemade Nutella Donuts are extremely soft and stay soft for days. They are stuffed with Nutella (but feel free to use a different filling if you prefer) and coated in a delicious cinnamon sugar mixture.

Nutella Donuts

There’s nothing like a warm, soft, fluffy fresh donut. Donuts always taste best fresh, because that is when they truly are the softest and fluffiest. You can’t get donuts any fresher than when you make them at home. Donuts are actually fairly easy to make, and these Nutella Donuts are some of my favorite!

Here’s how to make Nutella Donuts

Making the dough

These Nutella donuts are easy to mix together. You’ll add the ingredients to the bowl of your stand mixer and mix on medium speed for 5 minutes. The dough is a softer dough. Transfer the dough to a lightly greased bowl, spray the top of the dough with nonstick spray and cover with plastic wrap.

I like to use my handy dandy warm oven trick for a faster rise for these Nutella doughnuts. Turn your oven on till it reaches 100F. Turn the oven off once it reaches this temperature. Place the covered dough in the warm oven for 45 minutes.

While the dough does it’s first rise, I like to cut out roughly 10 pieces of parchment paper measuring 4×4 inches. You’ll place the doughnuts on here, which makes it easier to transfer to the frying pot. Spray the parchment paper squares with nonstick spray to ensure the dough doesn’t stick.

Roll the dough on a lightly floured surface until it reaches 1/2 inch thickness. Cut the doughnuts out using a 3 inch circle cookie cutter or a heart shaped cookie cutter. Place onto prepared parchment paper squares, then cover.

Allow the dough to rise in a warm place for 15 minutes

In a large pot or deep pan, heat 3 inches vegetable oil to 350F. Carefully place parchment paper square in oil, then using tongs, pull the parchment paper square out from underneath the doughnut. Fry doughnuts 3-4 at a time until golden brown, then flip and fry other side. Remove doughnuts with a slotted spoon and place on a paper towel lined baking sheet, or a wire cooling rack with paper towels lined underneath.

Using the handle of a spoon, insert into one side of the doughnut, then move the handle back and forth to create a pocket for the Nutella filling. Using a pastry bag or zip-top bag with one corner snipped, pipe Nutella into donuts.

Ingredients

Units Scale
  • 2 1/4 teaspoons instant yeast
  • 1 cup whole milk, warmed to 110F
  • 1/3 cup granulated sugar
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 8 tablespoons unsalted butter, softened, cut into small pieces

Cinnamon Sugar Coating

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Nutella, for filling


Instructions

1. In the bowl of a stand mixer fitted with the dough hook attachment, add yeast, warm milk, sugar, flour, salt, eggs and softened butter. Knead on medium-low speed for 8 minutes. The dough will be soft and tacky. This is how it’s supposed to be. It will yield super soft doughnuts.

2. Transfer the dough to a medium to large size greased bowl. Spray the top of the dough with nonstick spray, then cover with plastic wrap.

3. Allow to rise in a warm place for 45 minutes (I like to turn my oven on. Once it reaches 100F, I turn the oven off, then place the covered dough in the warm oven).

4. In the meantime, cut out roughly 10 4×4 inch squares of parchment paper. Very lightly spray the parchment paper squares on one surface. These will be for the doughnuts to sit on, so you don’t want them to stick.

5.  Punch dough down and roll out on a floured surface to ½ inch thickness. Using a 3 ¾ inch round cookie cutter, cut the dough out. Reroll scraps as needed. You should get roughly 12 doughnuts. Place on cut out squares of parchment paper. Cover with plastic wrap.

6. Turn the oven on. Once the oven reaches 100F, turn oven OFF. Place covered doughnuts in warm oven and allow to rise for 15 minutes.

8. When the dough is almost done rising, fill a large pot or deep pan with vegetable oil 3 inches deep. Place over medium heat until it reaches 325-350F. Line a baking tray with paper towels, or place paper towels underneath a wire cooling rack.

9. Fry the doughnuts, 3-4 at a time, making sure to not crowd the pot. Carefully place parchment paper square in oil, then using tongs, pull the parchment paper square out from underneath the doughnut. Fry on each side until golden brown, flipping halfway through. Transfer doughnuts to paper towel lined baking tray or wire cooling rack, lined with paper towels underneath. Repeat with remaining doughnuts.

10. In a shallow bow, mix together cinnamon and sugar. Place doughnuts in the cinnamon sugar mixture, turning to fully coat.

11. Using the handle of a spoon, poke a hole in the side of a doughnut, then move the back of the spoon back and forth to create a cavity for the filling. Place Nutella in a zip-top bag, snip a corner off the bag, then pipe the Nutella into the center of the doughnut. Enjoy!
