This Parmesan Garlic Chicken Pasta is an easy, rich and flavorful meal that can be made in roughly 30 minutes. Tender pan-seared chicken is tossed with pasta in a velvety smooth garlic parmesan cream sauce. This meal is the ultimate comfort food, made in one pot for a quick, flavorful dinner.

Ah, it’s Sunday again :). I do love Sundays. They just seem like a cozy day of the week. Traffic seems lighter and I try to spend my day really just enjoying the little moments with my family.

This Sunday’s supper I am sharing my Parmesan Garlic Chicken Pasta, and let me tell you, I could eat this one every day of the week. It’s easy, delicious and packed with flavor. This meal would definitely make a great weeknight meal, because you can make it in one pan in roughly 30 minutes, but it makes a great cozy Sunday meal too.

Sunday Supper Chats

A few weeks ago I decided to start sharing a Sunday supper recipe with not just the recipe, but a little supper time chat. Growing up, Sunday suppers were my favorite supper time of the week. It was the day that we all just really took the time to sit and converse with one another. Our chats weren’t anything special. We would just talk about our days and the week ahead. But we never rushed off from the table to go do work, or finish homework. We just took the time to enjoy one another.

And, you know, it worked. I have wonderful memories from our Sunday suppers. My dad passed away last year, and my mom has Parkinsons dementia. After my dad passed away last year, it really hit me hard. I’m in my 30’s and while I know people lose their parents younger than me, I still felt young to lose my dad, especially after just having a newborn daughter. Anyways, I decided that I want to continue my Sunday supper chats with not just my own family but all of you, because all of you have become like family to me and I have enjoyed all of the wonderful friendships and the community that we have built together. This week where I live we saw a decrease in temperature. Each morning the temperature started out in the low 50’s and steadily climbed to the mid 70’s. It truly is beginning to feel like fall! Hence my recent sharing of pumpkin and apple recipes. I am a summer girlie, but I do absolutely love the cozy fall season. 

This week, I’m thinking of making chai scones (what are your thoughts on that flavor scone?), and a few sourdough recipes, as long as my sourdough starter is ready (yes, I had to restart it! Story of my life, I always forget to feed it, haha). Any recipe recommendations from all of you? What should I make this week?

Okay, now I want to hear about your week! What did you make this week? Anything fun or exciting this past week or in the upcoming week?

Ingredients

Units Scale

Chicken

  • 1 tablespoon olive oil
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-size pieces
  • 1/2 teaspoon paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Pasta

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 yellow onion, sliced
  • 1 teaspoon paprika
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 3 1/2 cups chicken broth
  • 1 cup heavy cream
  • 9 ounces pappardelle pasta
  • 1/2 cup freshly grated parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

1. Season the chicken. Add chicken to a bowl, along with paprika, garlic and onion powder, oregano, parsley, thyme and salt and pepper. Toss to combine.

2. Cook the chicken. In a large skillet over medium heat, heat up olive oil. Add seasoned chicken to pan. Cook until chicken is cooked through, then remove to a plate.

3. In the same pan, add olive oil over medium heat. Once heated, add garlic and onion. Cook, stirring frequently, until onion is softened, roughly 4 minutes. Add paprika, Italian seasoning, salt and pepper and chicken broth. Add pasta and bring mixture to a boil. Boil according to package directions until the pasta is al dente. If the chicken broth is getting low, add a touch more.

4. Once the pasta is al dente, turn off the heat and add in the heavy cream, cooked chicken, parmesan cheese and fresh parsley. Stir to combine.

5. Serve and enjoy!
