Description
These Pumpkin Butter Swim Biscuits have become my simple, cozy go to brunch treat this fall. Soft, fluffy spiced pumpkin biscuits are layered with a brown sugar cinnamon swirl, then baked in a pool of butter. The butter soaks into the biscuits as they bake, creating an irresistible soft crumb, and crisp outer edges. A cream cheese glaze is drizzled over the biscuits right out of the oven.
Ingredients
For Pan
- 1/2 cup unsalted butter, melted
Biscuits
- 2 3/4 cups all-purpose flour
- 3 tablespoons brown sugar
- 1 1/2 tablespoons baking powder
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/8 teaspoon cloves
- 1/8 teaspoon allspice
- 1/2 teaspoon salt
- 1 1/2 cups whole milk
- 3/4 cup pumpkin puree
Cinnamon Swirl
- 1/4 cup heavy cream
- 1/3 cup brown sugar
- 1 tablespoon ground cinnamon
Cream Cheese Icing
- 3/4 cup powdered sugar
- 2 tablespoons cream cheese, semi-melted
- 1–2 tablespoons milk or heavy cream
Instructions
1. Preheat oven to 450F.
2. In a large bowl, add sifted flour, brown sugar, baking powder, cornstarch, spices and salt. Whisk to combine. Add in whole milk and pumpkin puree. Use a whisk, wooden spoon or rubber spatula to stir the batter together.
3. Make the cinnamon swirl. In a medium size bowl, add heavy cream, brown sugar and cinnamon. Stir together.
4. Assemble biscuits. Pour melted butter in pan. Tilt pan to coat sides.
Add 1/3 of biscuit batter into pan. Use a rubber spatula to spread the batter evenly into pan. There is not much batter and it is okay if it is not spread the whole way to the sides of the pan. Some of the butter will pool in over top. That is okay.
Use a spoon to drop dollops of cinnamon sugar swirl over batter.
Scoop another 1/3 of batter over top. Use a spoon or spatula to spread batter evenly (it is okay if you cannot spread it completely even. This is just to give the biscuits a few layers of cinnamon sugar swirl)
Use spoon to drop dollops of cinnamon sugar swirl over batter.
Scoop remaining amount of batter over top and spread evenly. (again it is okay if it is not completely spread evenly)
Use spoon to drop remaining dollops of cinnamon sugar swirl over batter.
5. Bake. Before baking, run a sharp knife through the biscuit batter to cut the biscuits into 9 roughly equal pieces. This scores the biscuits and makes it easier to cut the biscuits after they are done baking. It also allows the butter to seep into the cuts to create crisp, buttery edges. Bake in preheated oven for 25-30 minutes, or until biscuits are golden brown on top.
6. Make the icing. In a medium bowl, whisk together powdered sugar, heavy cream (or milk), and cream cheese. Drizzle over warm rolls.
