Red Velvet Cream Cheese Muffins
These Red Velvet Cream Cheese Muffins feature a tender rich crumb with a delicious, sweet cream cheese center. The muffins only take a few minutes to mix together before baking in the oven for roughly 15 minutes. These red velvet muffins feature the signature vibrant red hue and subtle cocoa flavor, which pairs perfectly with the silky smooth, sweet cream cheese center.

Red velvet is iconic for its beautiful, vibrant red hue. I must say, I love red velvet this time of year. Something about that beautiful bright red color, paired with the delicious mild, slightly tangy chocolate cake with hints of vanilla are just dreamy.
One of my favorite things to make, as you may guess by the large amount of muffin recipes on my blog, are muffins. I love the fact that muffins, generally, can be mixed in one bowl, without any fancy equipment. And, they usually can be made in 30 minutes or so, including baking time! These muffins are no different. They are very easy to mix together and take only about 15 minutes to bake.
These muffins would make a great breakfast or brunch treat around the Christmas/holiday season, but they would also be great for Valentine’s day, or honestly, just any time you are craving red velvet.

Red Velvet Cream Cheese Muffins

Description
These Red Velvet Cream Cheese Muffins feature a tender rich crumb with a delicious, sweet cream cheese center. The muffins only take a few minutes to mix together before baking in the oven for roughly 15 minutes. These red velvet muffins feature the signature vibrant red hue and subtle cocoa flavor, which pairs perfectly with the silky smooth, sweet cream cheese center.
Ingredients
Muffins
- 1/2 cup vegetable oil
- 3/4 cup granulated sugar
- 1 large egg
- 1/2 cup Greek yogurt
- 1/2 cup buttermilk
- 1/2 teaspoon red gel food dye
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 tablespoons cocoa powder
- 1/2 teaspoon salt
Cream Cheese Filling
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 375F. Line a 12-count muffin tin with muffin liners, or you can make your own (see note at bottom of recipe).
2. Make the cream cheese filling. In a large size bowl using a handheld mixer, or the bowl of your stand mixer fitted with the paddle attachment, add sugar, softened cream cheese, egg and vanilla extract. Beat until smooth and creamy.
3. Make muffins. In a large bowl, add vegetable oil, sugar, egg, yogurt and buttermilk. Whisk to combine. Add in the red food gel and stir until completely blended in. Add in the sifted flour, cocoa powder, baking powder, baking soda, and salt. Mix with a wooden spoon or spatula until just combined.
5. Fill prepared muffin liners with red velvet muffin batter. Scoop the cream cheese filling into a piping bag, or ziptop bag with one corner snipped off. Insert the piping tip or open corner into the center of the muffin and squeeze the cream cheese filling into the muffin, pulling the piping bag up and out as you squeeze the cream cheese filling into the muffin. Repeat until all muffins are filled with cream cheese filling.
6. Bake in preheated oven for 15-20 minutes, or until a toothpick inserted into the muffin comes out clean.
7. Allow muffins to cool 5 minutes in muffin tin, then remove and allow to finish cooling on wire cooling rack.
8. Serve and enjoy!
