Description

This Strawberry Banana Bread features moist, tender banana bread with homemade strawberry jam swirled through the bread. The bread is topped with a buttery cinnamon sugar crumb topping, and a drizzle of strawberry icing. The pockets of strawberry jam in this banana bread add brightness and a hint of tartness which balances well with the natural sweetness of the banana. This bread also uses Greek yogurt in the batter, which not only helps make the bread ultra soft, but also adds protein, and other beneficial nutrients.


Ingredients

  • 1/2 cup ripe bananas, mashed (approximately 1 large banana)
  • 6 tablespoons unsalted butter, melted
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup Greek yogurt
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

Strawberry Swirl

  • 1 pound fresh strawberries, hulled, rinsed, quartered
  • 1/3 cup granulated sugar
  • 1/2 teaspoon cinnamon (optional)
  • Juice of 1 medium size lemon

Crumble Topping

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, softened

Icing

  • 1 tablespoon strawberry jam (from the strawberry swirl)
  • 3/4 cup powdered sugar
  • 1 tablespoon heavy cream or milk

Instructions

1. Preheat oven to 350F. Line a 9×5 inch loaf pan with parchment paper and spray with nonstick spray.

2. Make the strawberry swirl. In a medium size saucepan, add strawberries, sugar, cinnamon and lemon juice. Bring to a boil, stirring constantly, then reduce heat to a simmer. Simmer for 15-20 minutes, or until thickened.

3. Make the crumble topping. In a medium size bowl, add softened flour, sugar and cinnamon. Stir to combine. Add in softened butter and using a fork, claw ingredients together until pea sized morsels remain. Set in refrigerator until ready to use.

4. Make the banana bread. Add banana and mash well using a fork. Add in the eggs, butter, sugars, and Greek yogurt. Stir to combine. Add in sifted flour, baking powder, baking soda and salt. Stir to combine.

5. Pour half the batter into the prepared pan. Add half the strawberry jam. Add remaining banana bread batter, then remaining strawberry jam (reserve 1 tablespoon for icing). Add crumble topping on top.

6. Bake in preheated oven 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow to fully cool in pan.

7. Make the icing. In a medium size bowl, add powdered sugar and strawberry jam (the one tablespoon you reserved earlier). Stir to combine, then add 1-2 tablespoons milk or heavy cream as needed until icing is desired consistency. Drizzle over bread. Slice, serve and enjoy!
