Description

This Caramelized Onion and Roasted Garlic Pasta combines the natural sweetness of onions and the depth of flavor from the buttery roasted garlic. After caramelizing the onions and roasting the garlic, spices, herbs, savory chicken broth and rich cream are added to the mixture to create a creamy, indulgent sauce. Freshly cooked pasta is tossed in the sauce then served with freshly grated parmesan cheese.


Ingredients

  • 4 medium onions, sliced thinly
  • 1 head garlic, cut in half
  • 4 tablespoons olive oil
  • Salt, to taste
  • 12 ounces angel hair pasta
  • 1/2 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 2 teaspoons parsley
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated

Instructions

1. Preheat oven to 400F.

2. In a 9×13 inch baking pan, add onions. Add head of garlic and place in aluminum foil. Drizzle with olive oil and season with salt and pepper. Wrap up the garlic clove. Alternatively, you can wrap with parchment paper and tie with kitchen twine. Drizzle 4 tablespoons olive oil over the onions. Toss to combine. Bake in 400F preheated oven for 60 minutes, stirring the onions every 15 minutes to ensure even roasting.

3. When the onions are almost done roasting, cook pasta according to package directions.

4. Once onions are done roasting, unwrap the garlic and allow to cool for 5-10 minutes, long enough to be able to handle. Squeeze the roasted garlic out of the shells. In the 9×13 inch pan, add heavy cream, chicken broth, paprika, thyme, parsley, soy sauce and season with salt and pepper. Stir to combine. Add in the shredded mozzarella cheese and parmesan cheese and stir until melted.

5. Add in the cooked pasta and toss to combine the pasta in the sauce. Serve with freshly grated parmesan cheese.
