This Cinnamon Roll Carrot Cake Coffee Cake merges the flavors of warm spiced carrot cake with a layer of brown sugar cinnamon, brown sugar cinnamon crumble topping and a drizzle of icing. The grated carrots make this cake incredibly moist and soft, with the use of less oil. This cake also uses Greek yogurt which adds extra nutrition, while also helping to create a very tender crumb. This cake is simple to make and only takes a few minutes to mix together.

Description

This Cinnamon Roll Carrot Cake Coffee Cake merges the flavors of warm spiced carrot cake with a layer of brown sugar cinnamon, brown sugar cinnamon crumble topping and a drizzle of icing. The grated carrots make this cake incredibly moist and soft, with the use of less oil. This cake also uses Greek yogurt which adds extra nutrition, while also helping to create a very tender crumb. This cake is simple to make and only takes a few minutes to mix together.


Ingredients

Cake

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup carrots, shredded
  • 1/2 cup milk
  • 1/4 cup Greek yogurt or sour cream
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking powder

Cinnamon Sugar layer

  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

Crumb Topping

  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons unsalted butter, softened

Icing

  • 1/2 cup powdered sugar
  • 12 tablespoons heavy cream or milk

Instructions

1. Preheat oven to 350F. Line an 8×8 inch pan with parchment paper. Spray the pan and parchment paper with nonstick spray. Set aside.

2. Make the crumb topping. In a medium size bowl, add flour, brown sugar and cinnamon. Whisk to combine. Add in softened butter and claw ingredients together with a fork until combined. Set in refrigerator until ready to use.

3. In a large bowl, add sugars, oil, egg, shredded carrots, milk and Greek yogurt (or sour cream). Whisk to combine.

4. Add in sifted flour, cinnamon and baking powder. Mix just until combined.

5. Pour batter into prepared pan. Sprinkle the crumb topping on top. Bake in preheated oven for 28-32 minutes, or until a toothpick inserted into the center comes out clean.

6. Allow cake to cool completely on wire cooling rack.

7. When ready to serve. Make the icing. In a medium size bowl, whisk together powdered sugar and heavy cream or milk. Drizzle over cake. Serve and enjoy!
